Our long experience has taught us the extreme importance of starting with the right conditions. For example, in a cook & chill operation the right temperature conditions during plating are essential. But, it’s not very popular to work in such a cold environment as would be required in a traditional cook & chill plating room. Iseco has developed equipment which enables you to stay within the guidelines of cook & chill, without your staff having to work in the cold:

  • The Omnis, a stationary plating buffet with active refrigeration, for use in a mildly conditioned room. For meal components that need to be regenerated later.
  • The Portis, a mobile refrigerator that functions without a door. For hors d’oeuvre, cold side dishes and desserts.
